All our mixes can be made with any oil of your choice e.g. coconut oil, light olive oil or rice bran oil.
It is recommended you use room temperature eggs
If you wish to bake without egg you can use egg substitutes such as ‘No Egg’ natural egg replacer (available at health food shops). Read the packet for directions. As always, carefully check any products you purchase for known allergens.

note: when baking the muffins without eggs an additional 1/2 teaspoon of baking powder added to mix is recommended.
If you want your goodies dairy free just add your choice of dairy free milk in place of milk, e.g. rice milk.
These versatile muffins are delicious with just about any fruit of your choice. Try ½ cup sultanas and 1 peeled, cored and finely diced apple, or apple with ½ cup of fresh or frozen blueberries. Yum!
